It’s no secret that I love using my Crock Pot.  I really like coming home to a meal that is already cooked. I think I enjoy a super easy clean up after my meal even more.  This meal is both!!

We are always so busy! Currently we have started Fall baseball so we have 2 practices every week and I want to continue to eat clean so this is a perfect meal to eat quickly before or after our practices and upcoming games too.

I have had so many roasts that have been dry and without flavor.  That ended a few years ago for us when I found a new way of cooking my roasts….and they are delicious now!

The trick is the homemade onion soup mix.  It is so easy to make, I promise.

What I need from my kitchen:
Carrot Peeler
Slow Cooker
Rachael Ray Tool Set

Ingredients:

  • 4 pounds chuck roast, local grass feed beef
  • 1 packet of onion soup mix
  • 1 cup of water
  • several peeled organic carrots, I love them and take them in my lunch the next day too :)
  • 1 onion, chopped
  • 3-4 organic potatoes
  • 1 stalk organic celery, chopped

Directions:

  1. Add the meat to the Crock Pot and place all other ingredients on top.
  2. Cook on low 8-10 hours.
  3. Enjoy!

This is such an easy, all-in-one meal! My husband is sure that this is the best roast he has ever had!
